Wenzhou Gold Yellow Tea

Wenzhou Gold is a traditional Chinese yellow tea produced in Pingyang County, Wenzhou, Zhejiang Province, China. It is also known by its Chinese name, Pingyang Huang Tang (平阳黄汤), and has been produced in the region for several centuries. Historically, it was recognized as a tribute tea during the Qing Dynasty.

Like all yellow teas, Wenzhou Gold begins with processing similar to green tea. After the leaves are heated to stop oxidation, they undergo an additional step called men huang ("sealed yellowing"), during which the warm leaves are covered and allowed to rest. This controlled yellowing process causes chemical changes within the leaf that reduce the grassy character commonly found in green tea and contribute to a smoother, mellower flavor.

Traditional Wenzhou Gold is typically made from one bud and two young leaves harvested in early spring. The finished tea produces a clear yellow liquor and is characterized by its distinctive yellow leaves, yellow infusion, and mellow aroma—qualities traditionally described in China as the "three yellows and one fragrance."
